Ingredients
- 1 (8 ounce) package Simply Potatoes® Shredded Hash Browns
- 4 eggs, beaten unitl frothy
- 8 ounces cream cheese, room temp
- 2 cups shrimp, boiled and peeled
- 1 cup salsa
Directions
- Divide potatoes into 12 muffin tins. Mix together the eggs and cream cheese. Add salsa. Divide shrimp, chopped small, between the cups. Pour the egg mixture over each one. Place in oven for about 20 minutes or until firm and slightly brown on top. Enjoy.
