Sarasota's Easy Mexican Cheesy Sloppy Joes

Serves: 4-6
Yields: 4-6 burgers
Ingredients
- 1 lb ground turkey
- 1 cup salsa (I use medium or hot, but use any heat level you like)
- 1 (11 ounce) can campbell's tomato soup
- 1 teaspoon cumin
- 1 cup monterey jack pepper cheese, grated
- 1 medium onion, very thin sliced
- 1 teaspoon olive oil
Directions
- Turkey -- In a medium sauce pan, add the olive oil and bring to medium high heat. Add the turkey and cook breaking it up as you go until it is no longer pink. Add the soup, salsa and cook on medium to medium low, simmering, and let the liquid reduce slightly. About 10-15 minutes.
- Onions -- Just slice and set to the side, break up the slices slightly.
- Rolls -- Toast the rolls either on a grill, under the broiler or in the oven, whatever works best for you.
- Sandwich -- On the bottom roll, add the onion slices, then the sloppy joe meat, then cheese and the top roll.
- ENJOY! A great sloppy, easy to make sandwich. Perfect for a weeknight.
