Saoco - Refreshing Rum Drink

From "Miami Spice: The New Florida Cuisine." Traditionally, saoco (sa-OH-ko) is made with the water (clear liquid) of a green coconut. Here in Orlando, coconut water is available in cans like soda.

Ingredients

• 2 1⁄2 ounces  coconut water
• 1 1⁄2 ounces light rum
• 2  teaspoons fresh lime juice
• 2  teaspoons sugar
•  ice cube

Directions

1. Combine all the ingredients except the ice in a shaker glass and stir with a spoon until the sugar dissolves.
2. Pour the mixture into a stemmed glass filled with ice.
