Santa Fe Style Rice & Beans

I love the Santa Fe Style Rice & Beans from Lean Cuisine so I decided to create one of my own. Make it as a meatless meal or serve as a side dish.....yum!! Show more

Serves: 4-6

Ingredients

  • 2  cups Mexican rice
  • 1 (15 ounce) can black beans, drained & rinsed
  • 1 (11 ounce) can  Mexican-style corn, drained
  • 12 cup  chopped onion
  • 2  cups  of shredded  mexican cheese
  • 1  teaspoon  oil
  • 1 (5 ounce) can  of chopped green chilies
  • 12 cup  chopped onion
  • 1 -2  tablespoon  chopped  jalapeno
  • 1  cup sour cream

Directions

  1. Preheat oven to 350. Grease an 8 x 8 baking pan.
  2. In a bowl, combine cooked mexican rice, black beans (rinsed and drained), corn (drained)and onion.
  3. Put into baking dish. Bake for about 15 to 20 minutes.
  4. While dish is baking, make sauce.
  5. In a sauce pan, saute onion and jalapenos in oil until onions are soft. Add green chiles and sour cream. Cook until smooth.
  6. Remove baking dish from oven and pour sauce over casserole and top with cheese.
  7. Bake about 5 to 10 minutes longer until cheese is melted.
