Sam's Carrot Cake

this is my best friend's signature dish.. it's almost the only thing she can cook

• Serves: 6-8
• Yields: 1 cake

Ingredients

• 1 (18 ounce) box  yellow cake mix
• 1 1⁄4 cups Miracle Whip
• 4  eggs
• 1⁄4 cup cold water
• 2  teaspoons cinnamon
• 2  cups  finely shredded carrots
• 1 (8 ounce) package cream cheese
• 1  teaspoon vanilla extract
• 2 -3 1⁄2 cups powdered sugar

Directions

1. preheat oven to 350.
2. with an elecgric mixer, mix together cake mix, salad dressing,eggs, water and Cinnamon.
3. slowly stir in carrots.
4. pour into 2 cake pans and bake 30-35 minutes.
5. for icing blend together cream cheese, vanilla and powdered sugar.
