Salsa Rollups

I love how fast and easy this is, but I must confess I found it a little plain, and I used a pico de gallo instead of salsa for the onions, cilantro, and fresh tomatoes. I added some ham and turkey and olives and pepperoncini's and whatever else I could find that would make this taste like a sandwich. I also found if I covered the entire tortilla with the cream cheese mixture it stuck together better, but I'll post it as written. Fast snack for guests, or kids, or your lunch. My personal preference is to make the mixture and have it in the fridge ready to go, and then wrap when it's time to eat. Show more

Directions

  1. In a large bowl, mix together softened cream cheese and sour cream until combined.
  2. Stir in salsa and cheese.
  3. Lay one large tortilla onto a clean surface and spread 1/3 cup of cream cheese mixture onto one half of the tortilla.
  4. Roll up tight leaving ends open.
  5. Repeat with remaining filling and tortillas.
  6. Slice into 1 1/2 inch circles and serve with salsa or saran wrap and chill until ready to use (up to 2 days).
