Salsa Quesadilla

Ingredients
- 2 no flour tortillas
- 3 tablespoons salsa
- 50 g cheddar cheese, grated
- 1 teaspoon olive oil
Directions
- Pour the olive oil into a heavy based pan and spread around with kitchen paper. Heat the pan.
- When hot, add a flour tortilla and cook both sides (about 2 minutes each side) over a medium heat.
- Remove the cooked flour tortilla and keep aside.
- Push the salsa through a sieve to drain off as much liquid as possible.
- Place the remaining flour tortilla in the pan and spread over the drained salsa.
- Sprinkle over the grated cheese and then placed the previously cooked tortilla on the top.
- Cook the quesadilla until the cheese melts (about 3 or 4 minutes).
- Cut into segments and serve hot.
