Salsa Chicken With Cheese

Yields: 2 chicken breasts
Ingredients
- 2 boneless skinless chicken breast halves, trimmed
- 2⁄3 cup chunky salsa
- 1 tablespoon dry white wine or 1 tablespoon lime juice
- 3 slices white cheddar cheese or 3 slices mozzarella cheese
Directions
- Spray the inside of a 3 qt crock pot with non-stick cooking spray and arrange chicken breasts in the crock. Pour salsa over the chicken and drizzle lime juice or wine over the top.
- Cover and cook on high for 1 1/2 to 2 hours, until the chicken is tender and cooked through. The chicken will make it's own juice as well.
- Lay cheese over each breast (or sprinkle with 2 oz crumbled goat cheese), cover and let stand 10 min before serving to melt the cheese. Serve immediately.
