Salmon With Spinach, Mushroom and Tomato

Ingredients
- 4 (4 -6 ounce) salmon fillets
- 2 cups fresh spinach, coarsely chopped
- 1 cup sliced mushrooms
- 1 medium tomatoes, coarsely chopped
- 1⁄3 cup oregano and sun-dried tomato dressing
Directions
- Spray a 13 x 9 baking dish with non stick cooking spray.
- Place fillets in bottom of dish.
- In a bowl, mix remaining ingredients to coat well and place over salmon.
- In preheated oven 425, bake 25 - 30 minute or until fish flakes easily with fork.
