Salmon With a Parmesan Crust

Add an Italian twist to salmon by broiling the fish with Parmesan cheese, basil, pine nuts and breadcrumbs. Serve with new potatoes and steamed broccoli. Show more

Directions

  1. Place the breadcrumbs, pine nuts, basil, butter and parmesan in a food processor and pulse until just combined.
  2. Place the salmon under a moderately hot broiler for 5 minutes
  3. Turn the salmon over, top with the breadcrumb mixture and press the fillets down gently with the palm of your hand.
  4. Cook for a further 5 mins or until the salmon is cooked through.
  5. Serve with new potatoes and broccoli.
