Salmon With a Parmesan Crust

Ingredients
- 4 salmon fillets (you can also use cod)
- 2 ounces fresh white breadcrumbs
- 1 tablespoon pine nuts, lightly toasted
- 3 ounces parmesan cheese
- 4 tablespoons fresh basil, chopped
- 1⁄2 ounce butter
- salt & freshly ground black pepper
Directions
- Place the breadcrumbs, pine nuts, basil, butter and parmesan in a food processor and pulse until just combined.
- Place the salmon under a moderately hot broiler for 5 minutes
- Turn the salmon over, top with the breadcrumb mixture and press the fillets down gently with the palm of your hand.
- Cook for a further 5 mins or until the salmon is cooked through.
- Serve with new potatoes and broccoli.
