Salmon, Tomatoes & Shallots With Balsamic Dressing

Ingredients
- 2 garlic cloves, peeled and cut in half
- 1 tablespoon sunflower oil
- 5 ounces shallots, peeled and sliced
- 4 salmon fillets
- 8 ounces cherry tomatoes
- 2 tablespoons balsamic vinegar
- 1⁄2 ounce basil, roughly torn
Directions
- Rub the inside of a large frying pan with the cut end of the clove of garlic. Heat the oil and saute the shallots.
- Add the salmon fillets and cook for approximately 10-15 minutes turning once. Remove from the heat and keep warm. Add the tomatoes, balsamic vinegar and the torn basil leaves to the pan, cook gently for 5 minutes.
- Serve the salmon, tomatoes and shallots on plates, drizzled with the pan juices.
