Salmon Dinner

This is a tasty and economical meal. I have had this delicious recipe for years and years!

Ingredients

  • 3  medium potatoes, peel and slice thin
  •  boiling water, to cover
  • 15 12 ounces salmon
  • 12  ounces  frozen peas
  • 1  cup  coarsely grated carrot
  • 14 cup  minced onion
  • 1  egg
  • 1  cup milk
  • 1 12 teaspoons salt
  • 12 teaspoon pepper
  • 12 teaspoon basil
  • 14 cup butter, melted
  • 1  cup  corn flake crumbs

Directions

  1. heat oven to 350*F. Cover potatoes with boiling water. Let stand 5 minutes and drain.
  2. Drain salmon, saving liquid. Break into bite size pieces, discarding skin and bones.
  3. Break peas apart.
  4. Combine the peas with the carrot and onion.
  5. Put half the potatoes in a greased casserole dish and top with half of the salmon and half of vegetables. Repeat.
  6. Combine the salmon liquid and milk, spices and egg. Beat together with a fork and pour over top of the casserole.
  7. Combine the melted butter and crumbs and sprinkle on top.
  8. Bake covered for 45 minutes, remove cover and bake 15 minutes longer.
