  1. Drain salmon and flake. Chop the cucumber.
  2. Sauté the salmon, cucumber and ginger briefly in ½ tablespoon of the oil, then remove from the pan.
  3. Add remaining oil to pan and sauté the rice. Return salmon mixture to the pan and season with salt and pepper.
