Salmon Cucumber Rice

Ingredients
- 2 1⁄2 ounces canned salmon
- 1⁄2 japanese cucumber
- minced ginger
- 1 tablespoon cooking oil
- 9 ounces cooked rice
- 1⁄2 teaspoon salt
- pepper
Directions
- Drain salmon and flake. Chop the cucumber.
- Sauté the salmon, cucumber and ginger briefly in ½ tablespoon of the oil, then remove from the pan.
- Add remaining oil to pan and sauté the rice. Return salmon mixture to the pan and season with salt and pepper.
