Salmon Cucumber Cups

Ingredients
- 3 English cucumbers
- 2 cups boursin cheese
- 1⁄3 lb smoked salmon, cut into thin strips (1/2 inch long)
Directions
- Slice cucumbers into ½ inch rounds.
- With a melon baller, scoop out the center of each round, leaving bottom intact, to make shallow cups.
- Using a pastry bag or spoon, fill cucumber cavities with cheese and top each with a strip of salmon.
