Salmon Croquettes

From my collection of handwritten recipes 1960's.

Serves: 4

Yields: 8 croquettes

Ingredients

  • 1 (16 ounce) can salmon (or 2 cups fresh cooked salmon)
  • 12 teaspoon salt
  •  cayenne pepper
  • 1  tablespoon  chopped parsley
  • 12 teaspoon  grated onion
  • 14 cup  cracker crumb
  • 1  egg, well beaten

Directions

  1. Flake fish, removing skin and bones. Add other ingredients and mix well. Shape into croquettes. Roll in bread or cracker crumbs. Beat one egg lightly with 1 Tblsp. water. Dip croquettes in egg mixture, then again in crumbs. Let stand 30 minutes. Fry at 375* until golden brown. Drain on paper towels and serve hot with tartar sauce and french fries.
