Salmon and Chive Crustless Quiche

Ingredients
- 20 g butter, melted
- 1⁄3 cup breadcrumbs
- 300 ml light sour cream
- 6 eggs, lightly beaten
- 210 g red salmon, drained
- 1 tablespoon chopped fresh chives
- 1 cup grated tasty cheese
- 1 tablespoon plain flour
- parsley (to garnish)
Directions
- Brush butter over base and sides of a 24cm diameter flan dish.
- Sprinkle breadcrumbs evenly over base and sides.
- Place sour cream in a large bowl; gradually whisk in eggs.
- Stir in salmon, chives cheese and flour.
- Pour mixture into flan dish.
- Bake at 180°C for 30 minutes or until just set.
- Garnish with parsley and serve with salad and crusty bread, if desired.
