Saffron Rice Pilaf

Ingredients
- 1 cup rice, uncooked
- 2 cups boiling water
- 2 chicken bouillon cubes
- 1 medium onion, chopped
- 1 tablespoon vegetable oil
- 1⁄2 cup currants
- 1⁄2 teaspoon curry powder
- 1⁄4 teaspoon saffron thread
Directions
- Saute onions in oil until golden.
- Add all other ingredients and simmer covered until all liquid is absorbed, about 12-15 minutes.
- Serve.
