Russian Salad

Serves: 6-8
Ingredients
- 2 cups potatoes, peeled, diced and cooked
- 2 cups carrots, peeled, diced and cooked
- 1 cup tart apple, peeled and diced
- 1 cup dill pickle, minced
- 1⁄3 cup onion, minced
- 2 cups beets, cooked, peeled and diced
Dressing
- 2⁄3 cup heavy cream, whipped or 2⁄3 cup sour cream
- 2 tablespoons fresh lemon juice or 2 tablespoons cider vinegar
- 1 dash salt, sugar and freshly ground black pepper
Optional
- egg, hard-boiled, sliced
Directions
- Place first 3 ingredients in large salad bowl and chill.
- Combine all dressing ingredients and chill.
- Add the beets to salad bowl just before serving and mix gently.
- Serve dressing on side, mounded on salad or mixed into salad ingredients just before serving.
- Garnish with eggs, if desired.
