Russian Pickled Mushrooms

Ingredients
- 1⁄4 cup dry white vinegar
- 1⁄4 cup red wine vinegar
- 3 tablespoons water
- 2 teaspoons olive oil
- 2 large garlic cloves, crushed
- 1 teaspoon sugar
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon dried thyme
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 12 ounces mushrooms, cut into quarters
Directions
- In a small saucepan, combine all ingredients, except for the mushrooms.
- Bring to a boil over medium heat and cook for 3 minutes.
- Add mushrooms and when mixture boils again continue to cook and stir, 1 minute more.
- Chill several hours or overnight to blend flavors.
- Serve cold.
- Preparation and cooking time does not include flavor blending time.
