Yields: 3 pints

Ingredients

  • 4  cups  assorted berries (preferably 1/2 dark and 1/2 red)
  • 3  cups  finely chopped pitted tree  fruit (such as apricots, nectarines plums or cherries)
  • 6  cups sugar
  • 14 cup amber rum

Directions

  1. Place berries in a large saucepan or Dutch oven. Bring to a boil over high heat then reduce heat and simmer for 3 minutes.
  2. Use a potato masher to crush berries then stir in tree fruit.
  3. Add sugar in a steady stream, stirring constantly. Increase heat to high and bring to a full rolling boil, stirring constantly to dissolve sugar.
  4. Reduce heat and boil rapidly, stirring often and reducing heat further has mixture thickens, for about 12 to 14 minutes or until mixture reaches a soft, jam like consistency.
  5. Test for doneness.
  6. Remove from heat and stir in rum. Skim off foam if needed.
  7. Ladle into prepared jars leaving a 1/4" headspace. Process jars in a boiling water bath for 10 minutes. Adjust time according to your altitude.
