Rum and Raisin Ice Cream With a 'Twist

Ingredients
- 3⁄4 cup raisins, chopped
- 1⁄4 cup dark rum
- 1 1⁄2 tablespoons freshly-squeezed lime juice
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 1 cup full-fat evaporated milk, mixed with
- 3⁄4 cup water
- 1⁄2 cup liquid honey, orange blossom is nice
Directions
- Combine raisins, rum, lime juice and vanilla extract in small bowl; cover and stand overnight.
- Place all ingredients in a large bowl and mix thoroughly; pour into an ice cream maker and follow manufacturer’s instructions.
