Ruby Whipped Cream Cheese Pie

This dessert is equally good in a baked pie shell or graham cracker, or shortbread crust. I love meringue shells, though. I make this for my friends and family all the time. Show more

Serves: 8

Yields: 1 pie

Ingredients

  • 1  package  junket danish dessert mix
  • 1 34 cups  cold water
  • 8  ounces cream cheese
  • 12 cup sugar
  • 12 cup heavy cream, whipped (makes 1 cup)
  •  meringue, shells (either 1 9" or 8 single serving "Whole" strawberries (if desired)

Directions

  1. Stir contents of danish dessert into water in med saucepan.
  2. Bring to full boil.
  3. Boil one minute,stirring constantly.
  4. Cool slightly.
  5. In small mixing bowl, beat cream cheese and sugar.
  6. Gently fold in whipped cream and 2 Tablespoons of cooled danish dessert.
  7. Spread into meringue shells.
  8. 6.
  9. Top with danish dessert, drizzling over edges for appeal.
  10. Top with whipped cream and whole strawberries if desired.
