Ruby Port Pork Tenderloin Marinade

Ingredients
- 2 lbs pork tenderloin
- 2 tablespoons soy sauce
- 2 tablespoons ruby port
- 1 tablespoon peanut oil
- 2 tablespoons honey
- 1 tablespoon light brown sugar
- 3⁄4 teaspoon adobo seasoning (goya powdered seasoning)
- 1⁄2 teaspoon cinnamon
Directions
- Combine ingredients and marinate in a one gallon freezer bag overnight. Heat 2 T. of peanut oil to medium-high heat in a cast iron skillet and sear all sides of the tenderloin. Transfer the skillet to a 425 degree oven for 20 minutes (or until 145 degrees internal temperature). Remove from the oven, tent with foil for 15 minutes, and serve.
