Royal Thai Siam Forest Salad

Ingredients

- 1 head lettuce, torn
- 1 cucumber, peeled, sliced
- 1⁄2 cup carrot, grated
- 2 tomatoes, sliced
- 1 onion, thinly sliced
- 4 eggs, hard boiled
- 1 cup bean sprouts
dressing
- 2 tablespoons oil
- 2 tablespoons peanut butter
- 2 tablespoons red curry paste
- 1 teaspoon chili powder
- 1⁄2 cup peanuts, ground fine
- 1 tablespoon sugar
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 2 cups coconut milk
- 1⁄2 cup shallot, deep fried, could use french fried onions here
Directions
- fry oil curry.
- chili powder.
- add finely chopped peanuts.
- add peanut butter.
- add sugar add lemon juice salt.
- coconut milk.
- shallot.
- bring to a boil.
- gently until oil rises.
- put in serving bowl.
- salad.
- lettuce on bottom.
- cucumber center.
- tomatoes either side next eggs.
- bean sprouts either side.
- carrot either side.
- onion 4 corners.
