Royal Icing, Vegan

• Yields: 2 cups

Ingredients

• 1 1⁄2 teaspoons Ener-G Egg Substitute
• 2  tablespoons water
• 1  teaspoon fresh lemon juice
• 1⁄4 teaspoon  almond extract (or vanilla)
• 1 1⁄2 cups confectioners' sugar, sifted

Directions

1. Beat egg replacer with water and lemon juice until fluffy and dissolved.
2. Add sugar and beat until combined and smooth.
3. It might take a few hours to set up on cookies.
