Rosie's Ricotta Cheesecake

Ingredients
- 3 lbs ricotta cheese
- 5 eggs
- 2 tablespoons butter
- 4 teaspoons vanilla
- 1 cup sugar
- 2 lemons, rind grated
- 1 orange, rind grated
- 8 ounces cream cheese
Directions
- Preheat oven to 350°.
- Mix butter and sugar until creamy.
- Add eggs and vanilla.
- Add cream cheese.
- Add ricotta.
- Fold in grated lemon and orange zest.
- Spray Pam into 2/ 8 or 9 inch pans.
- Bake for 1 hour.
