Rolled Oats and Peanut Butter Cookies

Ingredients
- 1⁄2 cup butter, softened
- 1⁄3 cup sugar
- 1⁄2 cup peanut butter
- 1⁄3 cup brown sugar
- 2 egg whites
- 1⁄2 teaspoon vanilla
- 1 cup all-purpose flour
- 1⁄2 teaspoon baking soda
- 1 cup rolled oats
Directions
- Preheat oven to 375.
- Blend butter and sugar together. Add peanut butter and brown sugar. Beat until mixture is throughly combined. Scrape sides of bowl.
- Add egg whites and vanilla. Beat until combined.
- Add flour and baking soda and mix well.
- Stir in rolled oats.
- Drop dough 2 inches apart on an ungreased cookie sheet and bake for 8-10 minutes.
