Rock Drops/Rock Cakes

Yields: 20 cookies
Ingredients
- 2 cups flour
- 4 tablespoons granulated sugar
- 6 tablespoons softened butter (room temperature)
- 2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground nutmeg
- 1⁄2 cup favorite dried fruit (larger pieces should be choppped)
- 2⁄3 cup milk (soy milk works nicely)
- 1 egg
Directions
- Heat oven to 400 degrees F and grease a baking sheet. (Cooking spray will do.).
- Sift the dry ingredients into a bowl.
- Add margarine, rub in until like fine bread crumbs.
- Mix in fruit.
- Beat egg. Add beaten egg and milk to form a stiff dough.
- Spoon onto cookie sheet. approximately 1 tablespoon mixture each cookie. Should look rough.
- Sprinkle with a little granulated sugar (optional).
- Bake for 15 minutes until light brown.
- Cool on wire rack.
