Robin Miller's Neapolitan Eggplant Parmesan

Ingredients
- 1 eggplant, roasted and sliced
- 1 (28 ounce) can spicy pasta sauce
- 1 cup shredded mozzarella cheese
- 1⁄4 cup grated parmesan cheese
- 1⁄4 cup chopped fresh basil leaf
Directions
- Preheat oven to 400°F Coat a lare baking sheet with Pam.
- Arrange eggplant slices on prepared baking sheet.
- Top each slice with an equal amount of sauce and then top with mozzarella and Parmesan.
- Bake 8 - 10 minutes, until cheese is bubbly.
- Top with basil before serving.
