  1. On rimmed baking sheet, combine zucchini, oil, salt and pepper and toss well to coat. Roast at 350 for 15 minutes or until soft.
  2. Transfer to a food processor and pulse until smooth.
  3. Transfer to a bowl and combine with sour cream, lemon juice and capers.
