Roasted Zucchini Dip

Yields: 1 1/4 cups
Ingredients
- 1 1⁄2 cups coarsely chopped zucchini
- 1⁄4 cup olive oil
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄2 cup sour cream
- 1 tablespoon lemon juice
- 1 teaspoon minced capers
Directions
- On rimmed baking sheet, combine zucchini, oil, salt and pepper and toss well to coat. Roast at 350 for 15 minutes or until soft.
- Transfer to a food processor and pulse until smooth.
- Transfer to a bowl and combine with sour cream, lemon juice and capers.
