Roasted Rosemary Potatoes

Ingredients
- 4 medium potatoes
- 1⁄4 cup finely chopped onion
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh rosemary or 2 teaspoons dried rosemary
- 1 teaspoon chopped fresh thyme or 1⁄4 teaspoon dried thyme
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
Directions
- Heat oven to 450°F.
- Grease a jelly roll pan (15 1/2x10 1/2x1-inch).
- Cut potatoes into 1-inch pieces.
- Mix remaining ingredients in large bowl.
- Add potatoes and toss to coat.
- Spread potatoes in a single layer in the pan.
- Bake uncovered 20-25 minutes until they are light brown.
