Roasted Red Peppers With Anchovy Spiked Olive Oil

Ingredients
- 6 roasted red peppers, seeded and cut in strips
- 1⁄2 cup olive oil
- 6 anchovy fillets, minced
- 2 garlic cloves, minced
- 1⁄4 cup flat leaf parsley, finely chopped
Directions
- Place peppers in serving bowl.
- In a small bowl combine all other ingredients. Stir until combined. Pour over peppers.
