Roasted Red Pepper Hummus

Yields: 1 1/2 cups
Ingredients
- 15 ounces chickpeas, rinsed and drained
- 1 cup roasted red pepper, rinsed and drained
- 1 tablespoon olive oil
- 2 tablespoons fresh lemon juice
- 3 garlic cloves, minced
- 1⁄2 cup sour cream
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon pepper
Directions
- Add chick peas to processor and puree.
- Add roasted pepper and remaining ingredients.
- Puree until smooth.
- Refrigerate.
- Serve with cracker,small pitas, vegetables.
