Roasted Potatoes

My mother-in-law gave me this recipe recently; the lemon juice really gives an unexpected kick to the potatoes. Show more

Ingredients

  • 2  tablespoons lemon juice
  • 4  teaspoons olive oil or 4  teaspoons  vegetable oil
  • 12 teaspoon thyme
  • 12 teaspoon  garlic salt
  •  pepper
  • 6  small  red potatoes, quartered

Directions

  1. In medium bowl, combine lemon juice, oil, thyme, garlic salt, and pepper.
  2. Add potatoes; toss to coat.
  3. Place in lightly greased baking dish.
  4. Bake, uncovered, at 450° for 40 minutes or until tender.
