  1. Preheat oven to 400 degrees.
  2. Cut potatoes into 1/2 inch cubes.
  3. Mix ingredients through onion and spread onto a roasting pan.
  4. Roast 40 minutes, stirring once at 20 minutes, or until potatoes are tender.
  5. Let potatoes come to room temperature.
  6. Mix remaining ingredients and stir into potato mixture.
