Roasted Pork & Sweet Potatoes

Ingredients
- 3 1⁄2-4 lbs boneless pork loin roast
- 2 teaspoons rubbed sage
- 1 teaspoon dried thyme leaves
- 1 garlic clove, pressed
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 3 lbs sweet potatoes (cut into chunks)
Directions
- Preheat oven to 350 degrees. Mix together sage, thyme, garlic, salt & pepper. Rub all but 2 tsp over entire pork roast.
- Spritz potato chunks with oil & toss with remaining herb mix. Put roast & potatoes in covered roaster & bake for 1 hr 15 minute bake uncovered for additional 15-30 min or til thermometer inserted in meat reads 165 degrees.
- Let roast stand 10 min before serving.
