  1. Preheat oven to 450*.
  2. Place parsnips and sweet potatoes in a plastic bag with olive oil and salt and pepper.
  3. Shake until well coated.
  4. Spread in a single layer on a cookie sheet.
  5. Roast until golden, turning once, about 25 minutes.
