Roasted mustard potatoes

Ingredients

•  light vegetable oil cooking spray
• 4  tablespoons Dijon mustard
• 2  teaspoons paprika
• 1  teaspoon cumin
• 1  teaspoon chili powder
• 1⁄8-1⁄2 teaspoon cayenne pepper
• 16  baby red potatoes or 4  medium potatoes, cut into chunks

Directions

1. Preheat oven 400F degrees.
2. Spray roasting pan with cooking spray.
3. Whisk all ingredients,except potatoes,in a bowl.
4. Prick potatoes with a fork.
5. Toss with the mustard mix.
6. Place in the pan.
7. Bake 45 minutes to 1 hour.
