Roasted Honey Sweet Potatoes

Ingredients
- 6 medium sweet potatoes, peeled and cut into 1-inch cubes
- 1⁄3 cup honey
- 1⁄4 cup olive oil
- 1 1⁄2 teaspoons salt
- 1 1⁄2 teaspoons ground cinnamon
- 1⁄2 teaspoon ground black pepper
Directions
- Preheat oven to 375*.
- Place potatoes in a large bowl.
- Whisk together honey, oil, salt, cinnamon and pepper; add to potatoes and toss to coat.
- Transfer to a greased 15 x 10 x 1 inch baking pan. (I like to use aluminum foil for easy clean up.).
- Roast until tender, 40-50 minutes, stirring once or twice to prevent burning.
