Roasted Cornish Game Hens

Game hens marinated in an herb and sweet/sour mixture, baked in the oven or, alternatively, spit-roasted. I like to serve 1/2 a hen on a nest of pasta, surrounded by vegetables. To prepare more than one hen, simply use 2 T honey and 1 T each vinegar and garlic per hen. Cook time includes 4 hour marinating time.

• Yields: 1 game hen

Ingredients

• 2  tablespoons honey
• 1  tablespoon vinegar
• 1  tablespoon garlic, minced
•  fresh thyme
•  fresh marjoram or  oregano
•  fresh sage
•  salt and pepper
• 1  Cornish hen, split in half

Directions

1. Mix all the ingredients in a plastic bag and marinate, refrigerated, for 4 hours.
2. Place chicken, skin side up, and marinade in baking dish and bake in 375° oven for 1 hour or until cooked through.
