Roasted Cauliflower and Radicchio Salad

Ingredients
- 4 cups cauliflower florets
- 1⁄2 teaspoon fine sea salt
- 1⁄4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon sherry wine vinegar
- 1⁄2 teaspoon Dijon mustard
- 1 large head radicchio, cut in 1/4 inch strips
- 1 cup parsley, roughly chopped
- 3 tablespoons chopped toasted walnuts
Directions
- In large bowl, toss cauliflower with half the salt, pepper and half the oil. Roast 35-40 minutes at 450.
- In a small bowl, whisk together the remaining salt, oil, vinegar and mustard.
- Toss cauliflower, radicchio and parsley with the dressing. Sprinkle with walnuts.
