Roasted Balsamic Vegetables....mmm!

If you love balsamic vinegar as much as I do these are for you! These are so good and are great served along so many dishes....steak, chicken etc...they are so tasty and did I mention easy!!! I made this up after tasting some roasted vegetables in a restaurant. The smell while they are cooking is divine! Show more

Directions

  1. Preheat oven to 350.
  2. Slice up carrots. Cut onion and red pepper into strips. Place in a casserole dish and toss with remaining ingredients. Bake in oven for approximately 50 minutes or until carrots are soft. Adjust your salt and pepper as required and serve.
  3. *I have also baked these on a baking pan. As well if I am in a hurry I have sauteed the mixture in a saute pan.You can also use other vegetables as desired. Hope you enjoy!
