Roasted Aubergine (Eggplant) Dip

Ingredients
- 2 large aubergines
- 1 small onion, chopped
- 2 garlic cloves, chopped
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
Directions
- Thread aubergines onto a skewer and grill under a medium grill for 10 mins, turn and grill for a further 10 minutes
- Allow aubergines to cool then peel and chop.
- Place all ingredients in a blender and process until smooth.
