Directions

  1. Cook bacon in heavy large skillet over medium heat until brown and crisp.
  2. Transfer to paper towels and drain.
  3. Crumble and set aside.
  4. Position rack in center of oven and preheat to 500 degrees.
  5. Arrange asparagus on large rimmed baking sheet.
  6. Drizzle with 2 T. oil and turn to coat well.
  7. Sprinkle generously with salt and pepper.
  8. Roast asparagus until crisp-tender when pierced with knife, about 7 minutes.
  9. Arrange asparagus in single layer on platter.
  10. Sprinkle with goat cheese, then bacon.
  11. Drizzle with lemon juice and remaining 2 t. oil.
  12. Sprinkle grated lemon peel over.
  13. If not serving right away, cover and serve at room temp later.
