Roast Sweet Potato, Squash and Garlic Mash

Ingredients
- 2 lbs squash, peeled and chopped
- 2 lbs sweet potatoes, peeled and chopped
- 2 heads garlic, halved
- 1 red chili pepper, left whole
- 3 tablespoons olive oil
- salt and black pepper
Directions
- Heat the oven to 400°F.
- Toss the vegetables, chili and garlic into a roasting tin, or divide between two, with the olive oil.
- Roast for 45 minutes. Halve and deseed the roasted chili and chop finely.
- Squeeze out the garlic cloves and mash everything together well.
- Season and serve.
