Roast Suckling Pineapple

Ingredients
- 1 ripe pineapple
- 8 whole cloves
- 1 cup maple syrup
- ground cinnamon
- 1⁄4 cup unsalted butter, melted
Directions
- With a sharp knife, remove skin and eyes from a whole pineapple, leaving the spiky leaves intact. Replace 8 of the eyes with the cloves. Remove some of the middle leaves and center the pineapple on a spit. Cover the leaves with foil.
- Mix together the maple syrup, cinnamon and melted butter.
- Rotate the pineapple over the grill, basting frequently with the maple syrup mixture, until browned and juicy and heated through, about 10 minutes.
