Roast Suckling Pineapple

  1. With a sharp knife, remove skin and eyes from a whole pineapple, leaving the spiky leaves intact. Replace 8 of the eyes with the cloves. Remove some of the middle leaves and center the pineapple on a spit. Cover the leaves with foil.
  2. Mix together the maple syrup, cinnamon and melted butter.
  3. Rotate the pineapple over the grill, basting frequently with the maple syrup mixture, until browned and juicy and heated through, about 10 minutes.
