  1. Preheat oven to 400.
  2. Combine 1st 4 ingredients in a large bowl; toss well.
  3. Place brussel sprouts on a jelly roll pan coated with cooking spray.
  4. Bake at 400 for 20 min, or until edges are lightly browned.
  5. Combine parsley, butter, pepper, and rind, stirring well.
  6. Add butter mixture to brussel sprouts and toss well.
  7. Sprinkle with cheese.
