Roast Grouse with Wild Rice

Yields: 2 grouse

Ingredients

  • 2 (1 1/2lb)  grouse, about
  •  salt
  • 12 cup  chopped onion
  • 12 cup  chopped mushroom
  • 1 (10 1/2ounce) can  condensed  consomme
  • 18 teaspoon  crumbled oregano
  • 1  cup wild rice
  •  water
  • 1  medium onion, chopped
  • 2  carrots, chopped
  • 1  apple, peeled and chopped
  • 1 (10 1/2ounce) can  condensed cream of mushroom soup
  • 14 cup  light cream
  • 14 cup red wine

Directions

  1. Rub grouse inside and out with salt.
  2. Combine onions, mushrooms, consomme, oregano, and wild rice.
  3. Bring to a boil and simmer until rice is tender, about 40 to 45 minutes, adding water when necessary to keep rice from sticking.
  4. When rice is tender, season to taste with salt.
  5. Stuff grouse with rice.
  6. Place onion, carrots, and apple in a shallow roasting pan and place grouse on top, breast side down.
  7. Roast in a preheated 350 F.
  8. oven for 30 minutes.
  9. Turn grouse breast side up and roast until brown and tender, about 1-1/2 to 2 hours.
  10. Remove grouse to a platter and keep warm.
  11. Strain pan juices into a saucepan.
  12. Stir in soup, cream, and wine.
  13. Simmer, stirring, until sauce bubbles.
  14. Spoon sauce over grouse.
  15. Garnish with additional cooked wild rice.
