Roast Asparagus Wrapped in Pancetta With Lemon Mayonaise

Ingredients
- 7 ounces asparagus (about 10-12 spears )
- pancetta (16 thin slices )
- 1⁄4 cup olive oil
- fresh ground black pepper
- 1⁄2 cup mayonnaise
- 1 lemon, juice and grated rind of
- 2 tablespoons fresh dill (finely chopped )
Directions
- Heat the oven to 375 degrees.
- Prepare the lemon mayonaise in a small serving bowl by mixing together the mayonaise , lemon juice and rind , and the chopped dill. Cover and place in the fridge.
- Wrap each asparagus spear in a slice of pancetta. Arrange on a baking sheet and drizzle the olive oil over them. Sprinkle a little black pepper on top and roast in the oven for 6 to 7 minutes ( I cook mine about 12 minutes ) until tender.
- Serve warm with the bowl of lemon mayonaise.
