Rita's Polenta Lasagna

Ingredients
- 16 ounces prepared polenta
- 1 medium zucchini
- 12 ounces cooked ground Italian sausage (chicken or turkey is great)
- 1⁄2 cup fresh basil leaf, thinly sliced
- 1 (32 ounce) jar marinara sauce
- 5 -6 slices provolone cheese
- 2 cups mozzarella cheese, grated
- 2 ounces parmesan cheese, grated
Directions
- Slice the polenta and zucchini into 1/4" slices; set aside.
- In seperate bowl, add cooked sausauge, add basil, and marinara sauce, mixing well.
- Arrange half of the polenta over the bottom of large skillet; top with half of the sausage mixture.
- Layer provolone, zucchini, and mozzarella over sausage mixture.
- Top with remaining polenta and sausage mixture.
- Cover and cook over medium high heat approx 8 - 10 minutes or until sauce is bubbly and cheeses are melted.
- Remove skillet from heat.
- Sprinkle grated parmesan cheese over lasagna and let stand, uncovered, approx 2 - 3 minutes.
- Garnish with remaining basil.
